Sometimes, when you're really lazy and haven't gone grocery shopping in a week because your boyfriend is out of town and your brother ate out already and you don't want to jump in your car to get anything because it's a 20-year old clunker with no AC,  you resort to looking in the fridge for some inspiration. Eggs and leftover pho noodles. Then in the freezer. Frozen shrimp. Avoiding the obvious shrimp noodle omelet, you go to the pantry.  Flour, baking powder.  Tempura!!

Shrimp tempura on a bed of pho noodles, shredded lettuce and baby carrots with nuoc mam.

It was really good except for the noodles. Pho noodles are definitely meant for pho only. I would use regular vermicelli noodles next time, but I didn't want to cook any more than I had to. :)
